You are what you eat and drink
I have always had a great interest in food and drinks and keep on extending my knowledge about these primary needs. At the Hotelschool The Hague some fundamentals were set. You learn a lot about the value of nutrients and about what you really need to eat. But of course there is more than need in food. Food and drinks are also used for improving brotherhood, to connect with people and many more reasons. An important one for us, my husband and I and also our adult children, is to enjoy food. And to take care of your body and mind by eating the right stuff. Next question will be of course: what is the right food?
Skip convenient and processed food
First of all, skip convenient and processed food, prepare your own meal with pure ingredients and gather knowledge to learn step by step what is necessary for your temple, your body and mind. During your life this will vary, because in every phase, your body and mind will ask for other food and a different amount of food. Our finca meals are very important, the hard physical work and for example the mental preparation for our events, ask for a balanced diet. Like the Spanish, we eat around 2 p.m. our ‘comida’, the 3rd moment of eating. Number one is ‘desayuno’ around 7 a.m., to be followed by the almuerzo, a kind of second breakfast around 10.30. This comida/meal around 2 p.m. is prepared by one of us and in a natural way we divide the cooking during the week. Often we cook outside, surrounded by the herbs we need for the cooking. We live our life almost completely outdoors.
At the moment of writing this, we are inside the house because outside it is raining, just what we needed for the finca. Because there is still an alarming drought to accept.

Nearly every meal is accompanied by wine, we love wine! We prefer our own wine from our own vineyard. Nevertheless, we also try other wines. You can learn and develop your taste with this. The secret about drinking a daily wine and securing our health is that we spit out our wine after we have had it rolling around in our mouth. You experience 100% of the wine, without swallowing it. During the weekends I make an exception for our own wine, a glass a day is enjoyed and swallowed. This is possible for me, because I know exactly how we treat the plants and the grapes and how our wine is made. Our wine is a 100% natural wine. The grapes carry the natural sulfite, no additional sulfite is added. Zero pesticides are used for the farming of the plants and the grapes. The soil is clean and natural. The winemaking is just pressing the grapes, letting the sugars transform into alcohol and store this prior to bottling. And nothing more. It is very sad to know that most commercial wines (!) contain pesticides from the farming, added sugars, alcohol, sulfites and colorants. In my life I want to take care of my body and mind, especially pesticides that can alter your mind in the long run. I prefer a healthy mind without getting illnesses that change your personality and character. And your life as well.
We extended our vineyard: a new grape is planted after a intense search and buy process

Look how the grapes are growing. Unexpectedly they all started growing, I am so proud of them. And really looking forward to the taste of this grape Malvasia. Spanish friends who have a big vineyard in Valencia also have the Malvasia used for their white wine. We will see how our soil will work out for this plant.
Guided tours and tastings

The next weeks more events are on the agenda. Our guests will enjoy our wine. And some will try other wines next to ours. There are people that insist on drinking our own wine and nothing else. And there are people that will try and taste the comparison. We have tailor made events. The combination of getting a guided tour and a wine tasting is very popular on the finca. People are very enthusiastic and learn things about the finca. The basis of how you grow your food. And how to prepare your food in a tasteful and healthy manner. With the wines people get to taste homemade delicacies like tasting our ‘dulce de membrillo’, our mermeladas, our cold pressed olive oil, the fruits served in different ways and in different combinations and much more. Now and then we even surprise ourselves with new creations, we pass them on to our guests. After an event our guests want to go to my shop in the bodega to buy our precious products, so they can enjoy this at home or give it as a present for their relatives or friends. We have recurring customers for our events and also in our holiday homes. This is for us the best appreciation people can make.
Our life is about getting to know people, creating bonds, brotherhood, friendships, sharing knowledge, helping each other and as a result developing ourselves to do the next round even better.
We love to meet you, be welcome!! And enjoy with us Finca Libertad.
Warm regards,
Mónica
